Vegetable and Lentil Weight Loss Soup
Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 6 cups low-sodium vegetable broth
- 1 can diced tomatoes
- 1 cup dry red lentils
- 2 large carrots, peeled and chopped
- 2 celery ribs, chopped
- 1 medium zucchini, chopped
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chopped kale or spinach
- Lemon wedges, for serving
Instructions:
1. Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
2. Add the cumin, coriander, smoked paprika, and cayenne pepper and cook for another 2 minutes, stirring constantly.
3. Add the broth, diced tomatoes (with juice), lentils, carrots, celery, zucchini, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 25-30 minutes until the lentils and vegetables are soft.
4. Add the chopped kale or spinach and cook for another 5 minutes until it wilts.
5. Serve in bowls with a squeeze of lemon on top.
